Vegan Rocky Road Recipe

I love rocky road as much as the next person, but on my journey to go plant based I realized I wouldn't be able to indulge in rocky road in cafe's again.. So I decided to adapt my own recipe and make it completely safe for vegans! It's safe to say that these didn't last too long in my household, I even gave some away so I couldn't eat all of them (hint, they are delicious!)

Ingredients

125g dairy free butter
25g golden syrup
400g dairy free milk chocolate
200g vegan marshmallows
200g rich tea biscuits
icing sugar to dust
extra marshmallows for decoration


Method

1. Melt the butter, golden syrup and chocolate in a deep saucepan, scoop out 150ml of the mixture and put it aside for later.
2. Break the biscuits into small pieces as well as crumbs.
3. Fold the biscuits into the melted chocolate mixture, then add the marshmallows.
4. Pour the mixture into a foiled tray, flattening down with a spatula. Pour the melted chocolate you put aside earlier over the top of the mixture and smooth over, sprinkling the extra marshmallows for decoration.
5. Refrigerate for 2 hours +
6. Dust icing sugar over and cut into your desired size and amount.
